Made a batch of carrot pancakes. Ran out of chickpea and fava flour so I added millet flour. I use Jamie Oliver's basic 1 cup flour, 1 cup milk, and 1 egg recipe for most of my baked stuff and play around with it. Here I added grated carrots, muscovado sugar, cinnamon, nutmeg, baking powder, and salt. Yum! I want to taste the carrot more though, any suggestions? I already used 2 pieces of carrots and the batter looked rather orange with lots of carrot strands but you don't taste it as much in the pancake. Little one loved this though.
